LADOB PATAT (SWEET POTATO )

  1. Peel and wash sweet potato, cut into small pieces.
  2. Place the sweet potatoes in a pan with coconut milk, sugar, salt, vanilla, essence and nutmeg.
  3. Simmer on medium heat until sauce thickens , stir occasionally.
  4. Remove from heat and serve cool.

 

Gateaux Piments (Chili Cakes)
 
250g dholl (red lentils or split peas) obtainable from Indian Supermarket
2-3 red chillies (adjustable to preferred taste)
2 tablespoons chopped coriander leaves (cotomili or cilantro -same thing)
2 tablespoons finely chopped spring onions
Dash of salt, to taste
1/2 tsp. whole cumin seeds or powdered cumin
Frying oil

Wash dholl in running water.  Put aside and allow to soak for 3 hours or so, even overnight.
 
Drain dholl in sieve and allow it to drain completely.  Put in a blender and grind to a coarse (be careful not to overdo it , you don't want the consistency to be too fine) consistency.
 
Place the grinded dholl in bowl; add all other ingredients and mix well.  If too thick, OK to add a couple of tablespoons of water to lighten the batter.
 
Heat oil, form small balls of batter using two dessert spoons, drop in hot oil until golden brown. Drain on paper towel and voila.
 
(I also add a few leaves of fresh cari pillay (curry leaves) to mixture for extra flavour.)
