Grilled Lemongrass-Skewered Seafood
Ingredients
4 oz. minced fish, skinned and boned
6 prawns
1.2 oz. crab meat
1 egg
Salt and pepper (to taste)
5 stalks of lemon grass
Garlic
2 tablespoons olive oil
Cilantro
1 Kaffir lime leaf
4 oz. mixed greens
1 oz. cucumber
A handful of Thai basil (hot basil)
Ingredients For Dressing
5 tablespoons olive oil
1 tablespoon lemon juice
Chopped shallots
Cracked black pepper
Method
1. Combine minced fish, prawns, crabmeat, egg, salt, pepper, garlic, Kaffir lime leaf and mix thoroughly until smooth. Grill a small piece and taste. Adjust seasoning to your liking.
2. Skewer with lemongrass and sear on all sides. Finish cooking in oven if necessary.
3. Serve over mixed greens with coriander, cucumber and the Thai basil (hot basil) lemon pepper vinaigrette.
